So what is IZMIR STYLE KOKOREÇ?
In Istanbul, kokoreç is taken from the embers, finely chopped, blended with tomatoes and spices, kept on the side of the sheet in most places, heated on the sheet when the customer arrives and served between bread.
In the Izmir style, kokorec is taken directly from the embers, not chopped after slicing, but simply dispersed with four or five knife strokes. Optional spices are added, served between bread.
